Question about food triggers

25 years old. Initially diagnosed with microscopic colitis, newly diagnosed with crohns. 

I have lots of triggers that I’ve taken out of my diet, reintroduced, and taken out again. Changing my diet literally changed my life. I’ve been on budesonide capsules for over a year now and could only tell a small difference until I changed my diet. But....

Dairy is a trigger for me and I’ve removed all forms out of my diet. It usually takes about 1.5-2 days after I eat it before I start to pay the price. I cheated and ate it over the Christmas holiday and fully expected to be sick. Instead, the exact opposite has happened and things are more normal for me now than they have been in months. No swollen stomach, no “D”, no stomach cramps, and no urgency to use the bath room. Anyone ever had this happen? It’s almost too good to be true.

I'm not sure if this is exactly the same but for me it's nightshades, specifically tomatoes. But they only affect me whilst I have symptoms. If I'm in remission, I can eat all the pizza and mashed potatoes I want but as soon as I start flaring, they only make things worse.
