Will anyone tell me how to substitute the butter and Kefir in the SCD or Gaps Diets? They use alot of butter, Ghee, and also Kefir which I can't have. When I am baking what should I use for the butter. Also what is the receipe for the homemade applesauce.

Extra Virgin coconut oil works excellent as a butter replacement in baking. I cannot have cows dairy or eggs.
1.5 TBLSP ground flaxmeal in 3 TBLSP hot water= 1 egg. I have made amazing vegan cornbread and cookies this way as well as turkeyloaf. The key is to let the flaxmeal sit in the very hot water for 10 minutes. It becomes egg like! It is amazing.

grass fed butter is butter from cows that only pasture on grass. The only one I know that is generally in stores is by KerryGold. They make cheese and butter from grassfed only. You might have to look in the imported cheese section. I had some recently, it was marvelous...... But at $4 stick I can't afford it. And my husband is the only one who eats butter at home, so he can have whatever he wants.

when you are baking you can substitute finely shredded vegetables - i would recommend sweet potato.... but if you are concerned about color - you can use others. root veggies seem to work best.

Alan I am lactose intolerant so any form of butter, yogurt , kefir would not work for me. Why not bake? I was hoping at certain times I could bake and use the nut flours etc. What is wrong with using them. How do people bake muffins, bread, anything? Right now I am eating watermelon, canteloupe, chicken, tea and cooked green beans or asparagus. I am tired of it and I wish I could have salads or pasta. I always thought I was a fairly healthy eater and not overweight so I guess the saying You are What You Eat is true. I guess I did not eat very healthy growing up. I know Crohn's has a genetic disposition to it but also our diet. Oh and what is grass fed butter?
