garlic

Mon, November 23, 2009 1:00 AM

Hi all,
I find that garlic really irritates my crohn's symptoms.  Yet, so many healthy recipes use a lot of garlic for flavor.

I was wondering, does anyone have any suggestions on how to use garlic in a recipe so that it is less irritating... (we usually use less than half of what the recipe calls for...which is occasionally tolerable, but still not ideal...)
Or, suggestions on what to substitute for the garlic so that I am not always cooking bland meals for family and friends.

thanks for the suggestions!

Have you tried using the garlic puree that comes in a jar? The one I use almost has the texture of cooked cream of wheat cereal. It's still fresh garlic, but maybe being so finely processed may help. This garlic has not seemed to bother my UC.

I do better as a rule when I eat to live rather than live to eat. Its just not worth it, being sick.

Have you tried using garlic powder instead of regular garlic? They don't taste the same in my opionion but maybe its a solution your GI can handle. Or perhaps try half real garlic half garlic powder. Good luck.

Truthfully, if I have a choice of irritating my colon or having somewhat bland food, guess I'd eat pabulum!

Kidding aside, since onions also can cause a lot of gas and irritation I stay away from the garlic and onion and use the dried minced onion, and not that much of it at that.

I use a variety of other spices including Rosemary leave for meat, sage and others spices including the mixed spices which don't have black pepper as that bothers me as well.

To me the key to using spices and making food taste good is spicing in moderation. Too much or too strong seasoning to me overpowers the taste of the food itself. The spice in my opinion should bring out the flavor of food and not over power it.

As for the gut- I don't eat what hurts as I don't see that as productive. A delicious meal but not being able to enjoy family and friends isn't worth it. Sometimes, even the "best" of foods can get to us, so who knows?
