New Way of Eating

So, I have had UC for over 3 years now and I am only 28 years old.  I recently am coming off being on Prednisone for almost 6 weeks due to a flare-up.  I have gotten fed up with not feeling well, not being able to lose weight, etc.  I started seeing a new doctor and am on a new lifestyle change/diet and WOW is it working!!!

I eat lean meat, green veggies, eggs, and drink water and EAS Advantage low carb shakes.  I have lost almost 11 something pounds in less than 2 weeks and am back in remission from my flare.  I also take a lot of vitamins and minerals (USANA is the brand I use).    I don't eat gluten, carbs, sugar and it really makes a difference.  I took one meal and "splurged" and ate carbs, etc. and ended up puking within an hour. 

I don't know if anyone else has the trouble I do, but I thought that I would share this info in case it can be of help to someone else.

Hi, I have UC and was wondering do you eat any bread at all and if you do what do I need to buy.  What are the carboyadrates you are leaving out.  Can you drink decaffanated tea in the morning?  And can you eat at least yogurt once a day.  HELP!

I normally stir fry in low sodium and gluten free teriyaki sauce, Himalayan salt, and black pepper.  The veggies I normally use in the stir fry are:  Asparagus, green pepper, cauliflower, broccoli, green onion, zucchini, mushrooms, sugar snap peas.  Then I usually will add chicken and even egg.  It's really yummy!  I don't seem to have problems with the above veggies yet (cooked/stir-fried) and I've been eating this for quite awhile.  I am on the drug Apriso and take 2 of them a day instead of the Pentasa I was on and the Apriso is working great too.

i eat similar diet and have been very lucky also w/ hardly any flare ups... only about once every few weeks when i *** up and eat something that i didnt' know contains something bad.  one question for you - what vegs work best for you? so far the only vegs i can handle (cooked of course) are squash (skinned) and spinach (baby- again cooked).    other vegs seem to cause problems.  i can eat tomato sauce of course but not raw tomatoes or any raw veg. i know i should have more veg but afraid to try more....
