Trying to gain weight

So with the recent diagnosis, i have had to change my diet. I have had to limit the things i eat for the time being as well as the quantity. With the things I eat, I feel full and satisfied after the meals, but I'm not gaining the weight. I weigh myself every Sunday mornings and record it on the S Health app on my phone to see where I am at. 

Mornings are Miso soup with some brown rice and either a plain toasted bagel or 2 pieces of toast with some pbj or almond butter and jelly. 

Afternoons I alternate between Salmon Burgers with some white rice and vegetables or have a chicken thigh i had cooked with white rice and vegetables. a bit later I would make myself an apple, cut it up and add little but of almond butter to few slices.

For dinner I tend to make soups or something else that was made (could be a pasta dish or other meat dish) or even something such as hard boiled eggs. 

I do try to squeeze in something else to have as a snack between meals. 

I have tried to increase what I eat, but when i eat I feel full. I want to balance things out and not over due some of the things that could damage me.

I did see my doctor who did give me a green light on eating other foods, foods i have been wanting for 2 months now, but its something i dont wish to dive into right away. Sticking to what i have been eating is simple, but its good enough that it has changed the way i feel.

I've had a recent diagnosis too and struggled with losing considerable weight and it's finally coming back on :)  I've added lots of bone stock soups to my diet because they have a ton of nutrients that are easy to absorb (minerals from the bone, fat from the collagen, etc). It's so easy to cook a whole chicken with a few tablespoons of apple cider vinegar (that extracts the minerals). I let it cook for about 3-4 hours with seasoning, debone the meat, add some white rice and maybe a few veggies (depending on how my belly feels) and I've got meals for the week. It's also hunting season in Montana so I hope to get some good soup bones because I'm getting bored of chicken. If you can also tolerate dairy, I started eating lots of whole fat yogurt and making custards and rice pudding when it was really bad. It had a lot of calories and it was easy for me to digest. If there's any way to sneak in coconut milk - that's also high fat and healthy.
