Ulcerative Colitis Cooking

Hi, all, sorry to start a new thread but searching for info has my head spinning. I am a personal chef and I have a new client who has ulcerative colitis. I am familiar with many of the restrictions but am confused by items listed on both the AVOID and ALLOWED lists, like nuts, nut butters, cucumbers, coconut, sauerkraut. I want to provide my client with a tasty menu, but not one that will exacerbate her symptoms. She is still in a bit of a flare-up and on steroids. Can I use a small amount of herbs, or should I just use essences? Any advice would be appreciated.
