I went to Mexico in 07 and 08. I was just diagnosed and the flares were pretty bad. The first time was on a cruise and I was able to eat "normal" foods. the second time we stayed in a time share for a week.  we cooked simple foods to avoid the spicier ones and when we traveled I was careful to only drink bottled water and ate simple foods. I also carried a few small snacks with me so in case I did get hungy.  but I notice when you are having a flare you don't eat very much.  Just becareful what you eat.  I even enjoyed my happy hours.....enjoy and just becareful.

If you are flaring be very careful.  I went to Florida and ended up in the ER.  Check on insurance coverage & hospitals in the area just in case.  Maybe somebody that has been to Mexico and had to seek medical help could help you.

I went to Mexico in 2005. The water bottles were cheap, so you shouldn't need to bring your own water. When I was down there I ate a lot of rice and fruits.

My daughter has UC and went to Cancun but was not in a flare up.  She did stay away from water, ice, anything that would be washed with water like lettuce things you'd eat like apples that would be washed with water.  They have bottled water.  I told her don't even swallow the water when she brushed her teeth.  She told her GI she went there after she got back.  The GI said next time to tell her so she could have given her a Rx that she could have filled here to take there just in case something happened.  My daughter was just fine in Cancun and didn't get sick at all.
